4 Mexican Food Items for Your Next Grilling Party

It's no secret that Mexicans love the outdoors, especially when it comes to barbecues. The country has sunny days all year round, so grilling in Mexican is not just for summer. This means that the country's barbecue traditions are deeply ingrained and people can get very creative.

Of course, every picnic in Mexico calls for thick rib eyes, tender flank steaks and ribs. What makes Mexican Picnic unique, however, are the add-ons. Let's talk food for your next Mexican picnic. To be fair, we're not talking about tacos - they're a given.

1. Sausage

Chorizo​​is a smoked pepperoni that is bright red in color and has a fiery, refreshing, fatty taste. Chorizo ​​has deep roots in Mexico, where Spanish conquistadors brought their deli tradition to the country centuries ago. Mexicans add their signature peppers to the mix, creating a sausage found only in the country.

Sausages and similar longaniza are quintessentially grilled items that add color and variety to the feast. Both sausages are based on pork and spices and are brightly coloured and tasty. Add sausage to your grilling repertoire and enjoy its unique flavor.

2. Grilled Cheese

Not all cheeses can withstand a blazing grill, but some can. Grilled cheese is a great way to add a meatless alternative to a menu, and Mexicans know it.

Heat-resistant cheeses such as panela, queso fresco and provolone can be sliced ​​and baked. Others, like Manchego, Chihuahua, and Gouda, can be melted in a pan. Needless to say, melted cheese makes lovely quesadilla fillings and delicious taco fillings.

Speaking of quesadillas, stuff some tortillas with your favorite processed cheese and bake for a delicious snack, best served with a dollop of guacamole.

3. Cambrai Onions

Cambrai onions are bite-sized onions with long stems. Also known as scallions, scallions, and scallions, this bulbous root vegetable makes a great roast. They may take their time, but the onions caramelize well on the grill.

It is rare to see a Mexican grill without a handful of Cambrai onions grilling on the side. When it comes to grilled onions, charred onions are great, so grill them. Of course, keep in mind that if you're not careful, the thinnest onions can slip off the baking sheet and onto the embers, so keep an eye out for them.

4. Guacamole

last but not least. Not everything in a Mexican picnic requires cooking. Guacamole is a thick sauce that goes well with steak and sausage. Guacamole isn't just a side dish, though, as it's a filling for tacos and quesadillas.

To make guacamole, mash some avocados and toss with chopped onions, cilantro, diced tomatoes, and chopped jalapeños or serrano peppers. Drizzle lime juice over your guacamole and season with salt. Chill your guacamole until ready to serve and add to anything - it's the Mexican way.
